THE JOB AS WINEMAKER is to allow the fruit and terroir of the vineyards to express itself. Graeme and Cameron both have their winemaking roots in Burgundy and uphold their traditions as much as possible. Through the use of age old techniques (with the aid of some modern equipment), they guide the fruit from vineyard to bottle as gently as possible. Read more...

Bendigo Shiraz 2008

A blend of fruit grown on Zonnebeke's granitic sands and Kingower's sandy loam aid this wine's complexity. Aromas of blackberry, licorice and sweet dark fruits with a touch of perfume follow on to the palate with soft tannins, good length and a rich mouthfeel. We have designed this wine for relatively early drinking, although it will cellar happily for a further 5-6 years.

Wine Making Notes

The fruit comes mainly for the Adam's Zonnebeke property at Rheola, in the Bendigo wine region. It is grown on granite sands, which we find endows the wine with soft, perfume characteristics. We pick it earlier than many of our Bendigo reds, the 2008 was picked at 13.5 Baume.

The grapes were de-stemmed, crushed and then fermented in variable capacity tanks, where they were pumped over twice daily, and plunged once.

Maturation occurred in top quality French oak for 12 months. Malolactic fermentation occurred naturally in spring. The wine was fresh egg white fined and course filtered prior to bottling.
