The Angel Cabernet Sauvignon 2008


Vibrant red-purple this Cabernet Sauvignon, with small additions of Cabernet Franc and Merlot displays lifted red and dark berry fruit aromas complemented by a touch of perfume and some enticing spice. These lead on to the palate, which is textural with well-integrated, fine tannins. A complex wine with finesse.

Viticulture

Two neighbors grow Merlot and Cab Franc for us and we combine this with selected, unirrigated cabernet sauvignon. Picked at 13.6 bé with the small percentages of merlot and cab franc at 14 bé. It was always made to be a wine of great longevity and still is.
Winemaking
It is de-stemmed and crushed, fermented in open stainless steel vats, plunged twice daily after the addition of a yeast culture.
Maturation
After air bag pressing and settling it is racked into French oak barriques and is regularly topped during its barrel maturation. Malolactic fementation occurs naturally in the warm weather and after that the wine is racked, egg white fined, sulphur adjusted and course filtered prior to bottling.
This wine shows its best after some years in the bottle and we have been able to keep it for those years so that the current releases already have some bottle age.
