Bendigo Shiraz 2010


Purple crimson in colour. The wine has enticing aromas of blackberry and dark fruit complemented by some nice spice and a whiff of perfume, typical of the Zonnebeke vineyard. The palate is very well structured with good acidity and fine tannins. While drinking well now, this classic Bendigo Shiraz well benefit from cellaring for a further 6-8 years.

Viticulture
The fruit for this wine predominantly comes from the Adam's ‘Zonnebeke' property at Rheola, near Kingower, 45km north west of Bendigo. The vines grow on granitic sand is a relatively cooler part of the Bendigo region. The fruit reaches optimum ripeness at 13 baume, which is a little lower than is typical for Passing Clouds Shiraz.
Winemkaing
The grapes are de-stemmed and crushed separately, separately fermented in open fermenters, where they are plunged twice a day to submerge the cap and thoroughly mix the wine and skins. Cooling is applied as appropriate to keep the ferment temperature at about 25 degrees.
Maturation
Maturation occurs in 1-4 year old fine grained French oak hogshead's. Malolactic fermentation takes place naturally in spring. Barrel ageing occurs for 11 months before the wine is egg white fined, course filtered and bottled.
