Vineyard
Grown by us at our Daylesford vineyard in the Macedon Ranges - at 770m ASL this is a truly cool/cold climate vineyard site. The vineyard is as meticulously cared for throughout the year as naturally as is possible. Extensive care is needed to ensure we get ample ripeness. Complex pruning and trellising techniques are used. Several passes are made of each vine every season ensuring that each shoot and bunch is in the most beneficial position.
Winemaking
The grapes were destemmed and then whole berry fermented over a ten day period. Fermentation took place in open stainless steel fermenters. The must was airbag pressed.
Maturation
Maturation occurred in 1-3 year old high quality French oak.
Malolactic fermentation occurs naturally as the mean ambient temperature reaches about 17 degrees and when complete the wine is racked, egg white fined, cold stabilized, sulphur adjusted, coarse filtered and bottled.
