10% whole bunches were covered with whole berries in small fermenters. Short cold soak of three days before they were inoculated with yeast. Hand plunged twice daily until pressing after ten days on skins. 100% seasoned French oak.
Vineyard, Vintage Notes
The vineyard is situated on the western side of a granite cap, near Kilmore, just outside of the Macedon Ranges GI. Vineyard soils are red granitic clay, overlaid in patches with grey sandy loam. The 18 acre site was planted in 1988 and 1998 to predominantly Pinot Noir and Chardonnay. Elevation is 400-428mm with an average rainfall of 700mm.
